# Expert Hacks:

01 -
  • The smoky Cajun butter transforms sweet corn into something that feels like carnival food but comes together in minutes
  • Roasting concentrates the corns natural sugars while those spices create this incredible crust that people cant stop talking about
02 -
  • Turn the corn halfway through roasting or one side will be perfect while the other stays pale and steamed
  • That second coating of butter after roasting is what makes this restaurant quality instead of just good
03 -
  • Peel back the husks just enough to check the kernels before buying, then pull them back up if you're not cooking immediately
  • If your corn seems less than perfectly fresh, increase the roasting time by a few minutes to concentrate those sugars
