Roasted sweet corn coated in a zesty Cajun spiced butter for a vibrant, flavorful side dish.

# What You'll Need:

→ Corn

01 - 4 ears fresh corn, husked and silks removed

→ Cajun Spice Butter

02 - 4 tbsp unsalted butter, softened
03 - 1½ tsp Cajun seasoning
04 - ½ tsp smoked paprika
05 - ¼ tsp garlic powder
06 - ¼ tsp onion powder
07 - ¼ tsp salt
08 - ⅛ tsp freshly ground black pepper
09 - 1 tbsp fresh parsley, finely chopped (plus extra for garnish)
10 - 1 tbsp lime juice

→ Optional Garnishes

11 - Lime wedges
12 - Extra chopped parsley

# How to Make It:

01 - Preheat your oven to 425°F, or prepare a grill for medium-high heat.
02 - In a small bowl, mix the softened butter with Cajun seasoning, smoked paprika, garlic powder, onion powder, salt, pepper, chopped parsley, and lime juice until well combined.
03 - Place the corn cobs on a baking sheet lined with foil or parchment. Brush each ear generously with the Cajun spiced butter, ensuring all sides are coated.
04 - Roast in the preheated oven for 20-25 minutes, turning halfway through, until the corn is tender and slightly charred. Alternatively, grill the corn directly on the grates, turning every few minutes for even charring.
05 - Remove from the oven or grill. Brush with any remaining Cajun butter and sprinkle with extra parsley. Serve hot with lime wedges on the side.

# Expert Hacks:

01 -
  • The spice blend creates this incredible crust that you'll want to eat straight off the cob
  • It comes together in minutes but tastes like something from a restaurant
02 -
  • Don't skip turning the corn halfway through or you'll get uneven charring that affects the texture
  • The butter mixture can be made ahead and stored in the fridge for up to a week
03 -
  • Peel back the husks but leave them attached at the base to use as a handle while eating
  • If corn is out of season, frozen kernels roasted with the same butter still work wonderfully
