Caramel Crunch Oyster Crackers (Printable)

Crispy crackers coated in buttery caramel glaze for an irresistible sweet-salty crunch.

# What You'll Need:

→ Crackers

01 - 6 cups oyster crackers (about 2 standard bags)

→ Caramel Glaze

02 - 1 cup unsalted butter (2 sticks)
03 - 1 cup packed light brown sugar
04 - 1/3 cup light corn syrup
05 - 1/2 teaspoon kosher salt
06 - 1/4 teaspoon baking soda
07 - 1 teaspoon pure vanilla extract

# How to Make It:

01 - Preheat oven to 250°F. Line a large rimmed baking sheet with parchment paper or a silicone baking mat.
02 - Spread oyster crackers evenly over the prepared baking sheet.
03 - In a medium saucepan over medium heat, melt butter. Add brown sugar, corn syrup, and salt. Stir constantly until mixture comes to a gentle boil; let boil for 2 minutes without stirring.
04 - Remove from heat. Immediately stir in baking soda and vanilla extract. The mixture will foam slightly.
05 - Pour the hot caramel mixture over the crackers. Use a spatula to gently toss and coat the crackers evenly.
06 - Bake for 30 minutes, stirring every 10 minutes to ensure even coating.
07 - Remove from oven and allow to cool completely on the baking sheet. The crackers will crisp as they cool. Break apart any clusters and store in an airtight container.

# Expert Hacks:

01 -
  • They are impossibly addictive and disappear within minutes at any gathering
  • The recipe comes together faster than you can preheat your oven
  • They strike that perfect balance between salty and sweet that everyone craves
02 -
  • Resist the urge to taste them while they are warm because they will seem soft and underdone
  • Stirring every 10 minutes during baking is nonnegotiable for even coating
  • The baking soda step seems strange but it makes all the difference for texture
03 -
  • Use a lightcolored saucepan so you can see the true color of the caramel as it cooks
  • Set a timer for those 2minute boiling intervals because overcooking makes the coating too hard
