01 - Preheat oven to 350°F. Line a baking sheet with parchment paper or a silicone baking mat.
02 - Place chicken skins flat, skin side up, on the prepared baking sheet, stretching gently to prevent folds.
03 - Sprinkle both sides of the skins with kosher salt, black pepper, and optional smoked paprika and garlic powder.
04 - Cover chicken skins with a second sheet of parchment paper and place a second baking sheet on top to keep skins flat.
05 - Bake for 20 to 25 minutes until skins are deep golden and crisp.
06 - Remove skins from oven, transfer to a wire rack, and let cool for several minutes before serving.
