- Preheat oven to 375°F. Lightly grease a baking dish with cooking spray or a small amount of oil.
- Lay turkey breast slices flat on a clean cutting board or work surface. Pat dry with paper towels if needed.
- Place 2–3 tablespoons of prepared stuffing in the center of each turkey slice. Top with half a slice of provolone or mozzarella cheese.
- Roll each turkey slice tightly around the stuffing and cheese filling. Secure with toothpicks if necessary to hold the roll shape.
- Place the turkey roll-ups seam-side down in the prepared baking dish, spacing them evenly.
- Pour the turkey or chicken gravy evenly over all the roll-ups in the dish.
- Cover the baking dish tightly with aluminum foil. Bake for 25 minutes to allow the turkey to cook through and flavors to meld.
- Remove the foil and continue baking for another 10 minutes, or until the turkey is fully cooked and reaches an internal temperature of 165°F when tested with a meat thermometer.
- Remove toothpicks before serving. Sprinkle with chopped fresh parsley if desired. Serve hot with mashed potatoes, steamed vegetables, or your favorite sides.
