01 - In a large mixing bowl, whisk together olive oil, lemon juice, minced garlic, oregano, thyme, salt, and black pepper. Add chicken cubes and toss to coat evenly. Cover and refrigerate for at least 1 hour or up to 8 hours to allow flavors to develop.
02 - In a medium bowl, combine Greek yogurt, grated and drained cucumber, minced garlic, olive oil, chopped dill, lemon juice, and a pinch of salt and pepper. Stir well and refrigerate until ready to serve.
