01 - Line a baking tray with parchment paper and place half of the cookies, flat side up, on the prepared tray.
02 - Using a small ice cream scoop or tablespoon, place one scoop of vanilla ice cream onto each cookie base.
03 - Top each with a second cookie, pressing gently to spread the ice cream evenly and form a sandwich.
04 - Immediately roll the sides of each sandwich in the sprinkles to coat the exposed ice cream edges completely.
05 - Place the sandwiches back on the tray and freeze for at least 1 hour or until completely firm.
06 - Serve directly from the freezer for best texture and consistency.
