01 - Preheat oven to 425°F. Line a baking sheet with parchment paper.
02 - Place halved Brussels sprouts in a large mixing bowl. Toss with olive oil, salt, pepper, and garlic powder until evenly coated.
03 - Spread Brussels sprouts in a single layer on the prepared baking sheet. Scatter chopped beef bacon over the top.
04 - Roast for 20 to 25 minutes, stirring once halfway through, until Brussels sprouts are golden and tender and beef bacon is crispy.
05 - Transfer to a serving dish. Drizzle with balsamic glaze and sprinkle with Parmesan cheese, if using. Serve hot.
