Roasted Carrot Feta Salad (Printable)

# What You'll Need:

01 - 1.75 pounds carrots, peeled and sliced into sticks
02 - 1 small red onion, thinly sliced

# How to Make It:

01 - Preheat oven to 400°F. Line a baking sheet with parchment paper.
02 - Toss carrot sticks and sliced red onion with 1 tablespoon olive oil, salt, and pepper. Spread evenly on the parchment-lined baking sheet.
03 - Roast in the preheated oven for 25–30 minutes, turning once halfway, until carrots are tender and caramelized at the edges. Allow to cool slightly.
04 - In a small bowl, whisk together remaining olive oil, honey, lemon juice, Dijon mustard, minced garlic, salt, and freshly ground black pepper until emulsified.
05 - Place mixed greens, roasted carrots and onions, half the feta cheese, half the toasted pumpkin seeds, and most of the parsley and mint into a large salad bowl. Pour the dressing over and gently toss to coat.
06 - Arrange salad on a serving platter or individual plates. Top with remaining feta, pumpkin seeds, and herbs. Serve immediately.
