01 - In a medium mixing bowl, combine the softened cream cheese, softened unsalted butter, finely chopped fresh chives, fresh dill, kosher salt, and ground black pepper. Mix thoroughly until the mixture is smooth and all ingredients are well incorporated.
02 - Using a shamrock-shaped cookie cutter, carefully cut out shamrock shapes from each slice of soft white sandwich bread. Discard the crusts and any excess bread.
03 - Spread a generous and even layer of the prepared herbed cream cheese mixture onto half of the shamrock-shaped bread pieces.
04 - Arrange the thinly sliced English cucumber evenly over the cream cheese layer on each bread piece.
05 - Top with the remaining shamrock bread pieces to form the complete sandwiches.
06 - Gently press the sandwiches together. Optionally, garnish with additional fresh chives or parsley leaves for presentation. Serve immediately, or cover with a damp towel and refrigerate until ready to serve.
