→ Vegetables

02 - 1 medium carrot, julienned
03 - 1 red bell pepper, thinly sliced
04 - 1 cup snap peas, trimmed
05 - 2 green onions, sliced
06 - 1 tablespoon fresh ginger, grated
07 - 2 garlic cloves, minced

→ Teriyaki Sauce

08 - 1/3 cup low-sodium soy sauce
09 - 1/4 cup water
10 - 2 tablespoons honey or brown sugar
11 - 1 tablespoon rice vinegar
12 - 1 tablespoon sesame oil
13 - 1 tablespoon cornstarch, mixed with 2 tablespoons water

→ Rice

14 - 1 1/4 cups jasmine or short-grain rice
15 - 2 cups water

→ Garnishes (optional)

16 - 1 tablespoon sesame seeds
17 - Extra sliced green onions

# How to Make It:

01 - Rinse rice thoroughly under cold water until the water runs clear. In a saucepan, combine rice and 2 cups water; bring to a boil. Lower heat, cover, and simmer for 15 minutes, until tender. Remove from heat and let stand, covered, for 5 minutes.
02 - While rice cooks, heat 1 teaspoon sesame oil in a large skillet or wok over medium-high heat. Add ground turkey, breaking it apart with a spatula, and cook until browned throughout. Transfer cooked turkey to a plate.
03 - In the same skillet, add another teaspoon sesame oil. Sauté the minced garlic and grated ginger for 30 seconds until fragrant. Add julienned carrot, sliced bell pepper, and snap peas; stir-fry for 3 to 4 minutes or until vegetables are crisp-tender.
04 - Return the cooked turkey to the pan. In a small mixing bowl, whisk together low-sodium soy sauce, water, honey or brown sugar, rice vinegar, and cornstarch slurry. Pour teriyaki sauce into the skillet and stir well, ensuring everything is coated. Simmer for 2 to 3 minutes until sauce thickens and becomes glossy. Stir in sliced green onions.
05 - Fluff the steamed rice with a fork and distribute among serving bowls. Top rice with the teriyaki turkey mixture and vegetables. Garnish with sesame seeds and additional green onion as desired.

# Expert Hacks:

01 -
  • The velvety teriyaki glaze clings to every bite of turkey, making each forkful hit just right after a long day.
  • It comes together quicker than waiting for takeout, and the fresh veggies keep it feeling bright and wholesome.
02 -
  • If you rush the cornstarch step or skip whisking, clumps can ruin the sauce’s silky finish.
  • Letting the veggies cook just until barely tender keeps the bowl from turning soggy and bland.
03 -
  • Let each part cook separately before mixing to preserve bold color and texture.
  • A smoky swirl of toasted sesame oil at the finish is my secret for irresistible aroma.
